I am not near my Anafi to fly it and find out so.. when it is in flight, can you switch between still photos and videos ... back and forth depending on what you want to record?

Yes, you can switch from still to video by pressing the camera icon for selection.

Yes you can change without problems. The only thing you can't do is to shoot a video and then snap a picture at the same time as some cameras can.

I'm hoping Parrot enables switching via the SC3(maybe a long press of the Shutter button) in a firmware update.

Both yes and no as the resolution does not get bigger than the one you are filming in. Then you can likewise take the picture from a frame in your video editor instead.
